Hi Lani, with sourdough recipes like this one, it's really necessary to allow the dough to rise at room temperature in order for the sourdough starter to ferment properly. In order to benefit from the flavor and rise the sourdough starter brings to the recipe, I wouldn't recommend freezing this type of dough.
