If you don't have a scale, be sure to use this method for measuring your flour by cups. You can also double the yeast and salt amounts. If you aren't able to bake or process all the rolls at once, it will work fine to refrigerate part of the dough after the first rise so that you can handle all the dough in a timely fashion. Just deflate the dough that you want to refrigerate (in bulk form), place in a greased bowl, and cover the bowl well so the dough doesn't dry out in the refrigerator. You can go right to dividing and shaping the rolls straight from the fridge, but it may take them a bit longer to rise once shaped.
