I too love King Arthur Flour and will buy no other, I have made the Amish potato dinner rolls many times using real potatoes. I let the dough rise, shape it into rolls, and put them on a lightly greased parchment paper-lined sheet pan. Then I cover with oil sprayed plastic wrap. Freeze them. Store in plastic zip bags. I take them out of the freezer the night before I need them and thaw them in the fridge overnight in the pan I will bake them in. Take them out about an hour before baking to warm up and rise. Bake as usual. Perfection every time!
