Hi there, Betty! Rather than freezing the unbaked cinnamon rolls, we'd suggest following the method in our Freeze and bake cinnamon buns blog article. There the buns are parbaked before being frozen, which we think will work out better for your cinnamon and pecan rolls. We hope this helps and happy baking!
