Hey Melissa! Pretty much every single one of our roll recipes calls for one or both of those ingredients because they hold moisture, add tenderness and flavor, and extend shelflife. But not to worry! We have a blog article about how to substitute for potato flour, and you can get around the nonfat dry milk powder by simply replace 1/4 cup of the water with regular milk. Happy baking!
