Hi there, Debbie! We haven't tried it ourselves so we can't say for sure, but we imagine that the rolls won't rise well after being frozen or at the very least will take quite some time to rise. If you do experiment with it, we'd recommend freezing the rolls just after shaping. Happy experimenting!
