Regarding your soft white dinner rolls to freeze ahead, can I substitute your potato flour instead of instant potato flakes? I normally make your "old" soft white dinner roll recipe which uses the potato flour. I bake the rolls and then freeze them, but it would be so nice to have them bake just before dinner.
