Hi JK! The rolls would most likely over-proof and collapse and you'd wind up having to reshape them the next day anyway, and because they'd over-proof, the gluten structure would be weaker and they finished rolls would be shorter and denser than the recipe intended, so it isn't something we'd recommend.
