Shari, that's a good thought! Unfortunately, we don't recommend thawing this more quickly, as it can cause issues with both the flavor and texture. Can we suggest another option? Our No Knead Crusty White Bread recipe hangs out in the fridge rather than the freezer, and the dough only requires one hour between taking it out of the refrigerator and popping it into the oven. Instead of shaping into loaves, you can form the dough into rolls on a well-floured surface (the dough tends to be quite sticky) and put them on a baking sheet. You'll probably find that it only takes them 20 to 25 minutes to bake, rather than the 25-30 recommended for the loaf. This should ensure you have tasty rolls without the need to wake up at 3 a.m. to start the thawing process. Kat@KAF
