Jorjie, everyone has different temperature settings on their freezer, so the time until freezing will depend on how cold you have yours set, where the rolls are located in the freezer, and what else you're adding to the freezer to freeze at the same time. A few hours does seem like a reasonable guess, but there's really no reason to keep checking on them. Just put them in the day before, and they'll be well frozen by the next morning. A little extra freezing time doesn't hurt anything at all! Kat@KAF
