Jamie, if you'd like to freeze and bake your rolls, try following this method outlined in our blog article, Freeze: Cinnamon buns in 20 minutes. It'll be a breeze to have your cinnamon rolls out of the oven before brunch on Thursday morning, and it'll also give you better results than letting the cinnamon rolls thaw in the fridge overnight.
