Hi, Chris. We're not sure that freezing these filled rolls will work out well, we're worried that filling might become too oily. Our suggestion would be to make your dough and follow the steps outlined here and freeze the plain dough. Then when the dough is defrosted you could roll the balls of dough out flat, fill them individually, roll them back up into a spiral, set them in a pan for their second rise and then bake as usual.
