If you're looking to adapt our Soft White Dinner Roll recipe to use all whole wheat, however, you may find that you need additional liquid (up to 1 Tbsp per cup of flour) to reach the desired dough consistency. To help limit the damage the sharp edges of bran can do to gluten development, try mixing your dough ingredients and allowing them to rest for 20 minutes before beginning to knead.
