So, I have found eating GF, which I do because of digestive issues, has positively impacted the control of my sugar levels. I am not diabetic but hypoglycemic. Anyway, if you proof the years, which I do. You heat water to 95-105’ then add the sugar/honey and yeast. You let it sit for 10 to 15 minutes like you said. Once it gets foamy, you know that they used as a live and it’s multiplying. Then, follow your recipe add the yeast make sure when it calls for it. Gluten-free bread is a bit tricky and a lot of them call for sourgum flour or psyllium husk, these flowers do make the bread more gluten like. I cannot eat them, but if you do not have an issue, I would suggest looking into some recipes that contain those added flowers and you’re gonna get a much more bread like consistency. Do some research online for gluten-free. Off the top of my head, I think of gluten-free on a shoestring and gluten-free Mama. I’m not a professional baker, so I can’t answer all your questions, but the one thing that came to mind to share as I was reading your post was, follow the gluten-free recipe exactly as it says. Gluten-free flours are temperamental and it is a brand new ballgame when it comes to baking with them. That said, if you follow the gluten-free recipe at King Arthur or any other website, just do exactly as they say. And you’ll start to learn how they work and I’m pretty sure that it will come out well for you. Best of luck! And I know giving up soda is hard, but it’s really much healthier. I used to be a soda addict, then I gave up caffeine. Really the best choice I made. That said, fake sweeteners are not healthy and could mess with your sugar levels even more. So be careful/mindful of the zero sugar stuff…which I think is disgusting and refused to drink. And once you have eliminated/decreased sugar, it won’t be as difficult going without! Just use moderation and you’ll be satisfied! I had to do a diabetic diet and it was a lot in the beginning, but once I learned what to eat it got easier and was still very satisfying. Add a healthy salad with light dressing to your meals, that really helped me.
