Hi John, great questions. In all of our taste testing and "bite and writes" that we do here in the test kitchen, we've found that there's a handful of people who actually dislike the flavor of an overnight proof in sweet breads. (The tang doesn't always pair well with the sweetness.) That doesn't mean you can't do an overnight rise with cinnamon rolls or other sweet, enriched bread, but it's best to limit the time in the fridge to 10-12 hours if possible. On the other hand, some kinds of bread (like sourdough), develop delicious yeasty flavor from slow, cool fermentation. Feel free to experiment with this technique to see which flavor you like best.
