I have read that either yeast will work well, but when using instant yeast in a recipe that calls for active yeast you would use less yeast. If the recipe calls for 1 teaspoon of active then you would use 3/4 teaspoon instant yeast. In your examples are you using the same amount of yeast, and am I correct in my statement?
