My Father had a bakery back in the day we used frest yeast to me had better flavor. My dad used red star and some others brands. He stop use frest yeast because he didn't get the volume. And started to us dry yest. He never dissolve the yeat before making bread or rolls and other pastries. To this day I never dissolve the yeast and I have great volume . I mix the yeast into the flour and pour into mixer and the warm water and start the mixer. I have never had any problem yet
