Both active dry and instant yeast are cultivated, dried, and ground to go into the packets or jars you purchase them in. They're two different strains of yeast, with very slightly different flavor profiles. We have, in fact, done exactly what you propose, many times in the test kitchen. The results are the same. The second rise may be a very little bit lower, but the results out of the oven are indistinguishable. I hope this helps. Susan
