Hi Jenni, thanks for the comment. The brand of coconut oil actually doesn't really matter - it's the temperature at which the coconut oil is stored that makes it hard to liquid. To get the coconut oil to soften, you can just pop it in the microwave for 5 - 10 seconds, scoop out what you need for the recipe and melt that fully in the microwave or stove.
