Ii generally use coconut oil instead of butter or vegan butter or margarine. My oil is neither hard nor liquified at room temperature unless it is either very cold or very warm in my house. I do use a refined coconut oil which imo has no coconut flavor. My cookies don't get too cake-like so I'm not sure why some of us get different results.
