It has been so hard to find flour, and I wanted to bake today. I had 5 pounds of KAF self rising flour, a recipe for cranberry nut bread, and your advice. My recipe called for 2 cups of flour, 1 1/2 teaspoons of baking powder, a 1/2 teaspoon of baking soda, and 1 teaspoon of salt. I added only the baking soda to the self rising flour, and made muffins instead of bread. The results were amazing. The recipe makes a very nice crumb anyway, but this made it so tender and delicious. They rose beautifully and looked perfect. Thank you for the advice! It was nice to be able to bake a treat for Easter morning!
