Hi Betty, Thanks for chiming in here and for adding your thoughts. Some kinds of Self-Rising Flour may contain cornstarch, but the kind made by us at King Arthur Flour does not have cornstarch added to it as an ingredient. It's milled from a softer wheat in order to impart a tender, delicate texture to baked goods. Our Cake Flour does have wheat starch added to it to prevent gluten from developing, which is sounds like might be what you're looking for in your sponge cakes. We hope this helps, and happy baking!
