I freeze a lot of our baked goods ahead especially when having a party. I always have a couple of kinds of baked cookies frozen. I package them in little freezer bags one dozen each. That way I can pull out as many as I need very easily. I also usually have a pound cake baked and in the freezer - double wrapped in plastic wrap and then sealed in a 2 gallon zip bag. We just had a party and I made the little mini cheesecakes from the KAF recipe. I put them in a plastic container, spaced out so they did not touch, froze them for a couple of weeks, and defrosted them in the frig overnight in the container. They were perfect. The other thing I do is make little sweet pastry tart shells, bake them, and then freeze. All I do is let them defrost a few minutes on the counter and then fill with a variety of fillings. Parties are so much easier if the desserts are done well ahead of time.
