I like making whoopie pies ahead of time. The componants store great separately in the fridge or freezer, then you can take out what you need, combine the cakes and the filling, and you have a quick dessert that looks like it took a bit. I also love having chocolate chip cookies on hand (the brown butter ones from you have become my speciality). :)
