I've been feeding a sourdough starter for almost 2 years. When feeding time comes and I have no plans to bake anything else, I make an overnight sponge with the excess for sourdough waffles. The next morning, it takes 2 minutes to mix the remaining ingredients and they are ready for the waffle iron. It requires some planning, but it is very easy to do.
