I purchased your Deli-Style Rye Flour Blend, and made a loaf of bread following the directions on the back of the bag. The only change I made was to use replace the 1/4 c. non-fat dry milk with 1 cup of 2% fat milk, and 1/2 c. of water. I followed the rising directions: 1.5 hours for the first rise, then gently deflated the dough and put it in the pan. I then let it rise 45 minutes, until it increased in size by 1/3. I baked it in a preheated, 375 degree oven for 40 minutes when it reached an internal temperature of 208 degrees.
The loaf was only 3 inches high when it finished baking. It was dense and chewy, and had very little flavor, even though I added the caraway seeds.
I think I should have let it rise longer when it was in the pan, but what can I do increase the flavor?
