Question: I want to make a no-knead sourdough (without any yeast) similar to the KA harvest loaf with cranberries (and nuts). Can you tell me how to convert a yeast recipe and a knead recipe to a no-knead sourdough? Your no-knead harvest is the closest I think, but calls for yeast. It seems besides long cold ferment (I can figure that part out) the amount of starter and the percent of water both could need adjusting. Any advice would be greatly appreciated. It would be interesting to see a basic 'do this to convert' which might be asking a lot but would get me going rather me experimenting. By the way, every recipe I make from your site turns out perfectly, you are now my go-to when looking for new ideas! Thank you
