P J, reading your blogs is more interesting than reading a novel. You sure understand sourdough and how to take the fear out of using it! I accidentally bumped into your blog on “Did I Kill It?”and remembered I had tucked some starter in the back of my refrigerator in June 2020 — 15 months ago! It still had the alcohol smell, and did not look too bad, so I thought, why not try to bring it back to life? Nothing the first 2 days, and only a few bubbles on day 3, then things started to happen and now my starter is bubbling away and I’m looking forward to trying your no-knead sourdough bread. You are an amazing person, the way you can give us bakers your “no fear”, common sense instructions. And, I love seeing how worn and loved your pans look in the pictures. They speak to me. Thank you, Thank you, Thank you!
