I am trying my hand at sourdough for the first time. I grew a healthy starter and did my first 2 loaves following the Naturally Leavened Sourdough Bread recipe. The flavor was great, crumb was an acceptable medium structure (not 100% on the vocabulary here).

The only thing I was not happy with was the baked rise. They rose nicely in the bowls but came out of the oven quite wide and flat. I would love to see a higher loaf. What might be the culprit?
