Hi Bob, Let's try to clarify more. Unfed starter= straight from the fridge starter that has NOT had flour and water added in the last 12-24 hours. Good flavor, but no real leavening power. Fed starter= starter that HAS had flour and water feeding in the last 12-24 hours. Bubbly and ripe, it can give flavor and has the active yeasts for leavening. Hope this helps! ~ MJ
