Wow, Wendy - you're dealing with a lot of sourdough questions! The starter should be the consistency of pancake batter. If not, simply add more water when you feed the starter. For slashing loaves, consider using a spray bottle to slightly moisten the surface before using your lame or knife to slash the bread. Now about the spreading loaves - this is a shaping thing that can be solved by looking at this video.before you shape another boule.
