Hi Eleanor, yes, you could certain make this bread with the addition of chopped pistachios and dried cranberries. I'd recommend using about 1/3 of the dough (540g) and working in up to 3/4 cup each of pistachios and dried cranberries. Feel free to use a little less if that seems like too much. Try rolling or spreading out the dough in a big rectangle and then sprinking the nuts and fruit on top and then gently kneading it in. This can take a bit of effort. Once you've worked them in, let the dough rest for about 30-45 minutes, and then shape and allow the shaped loaf to rise for about 1 1/2 hours. I would cover the dough for each rise with sprayed plastic wrap, so it doesn't dry out. Happy baking!
