Hi Chris! Humidity can certainly play its role in compromising the texture of a bread dough. I would recommend storing your flour in an airtight container, adding a bit more flour (or less water) to your bread doughs in the realm of a one teaspoon per cup, and also make sure you are not over-steaming your doughs. If there is too much liquid on the surface of the dough as it rises, then it will remain pale, soft and rise poorly.
