Hi Paul! It's common for bread baked in a loaf pan to be slightly lighter on the sides and bottom because the pan inhibits browning a bit. Once the loaves are almost fully baked, about 5 until they're done, you can try turning them out of the pan and placing them on a baking sheet so the sides can get a bit more color.
