Hmm, is it possible that your oven might be running a little cool, Donna? It might be worth checking with an oven thermometer, and adjusting what temperature you set your oven to accordingly. If your oven is running true to temperature, it sounds like your loaf needs another 5 minutes or so in the oven. Extend the covered baking portion to 35 minutes so the loaf doesn't get too dark once you've removed the lid. Annabelle@KAF
