Sabine, sounds like you might benefit from our Long Covered Baker blog, which explains how to make the most beautiful loaves of bread using this pan. You don't need to soak this pan. You can put it into a hot (up to 450°F) or a cold oven, depending on what kind of results you want. Either way, you'll want to let the dough rise right in the baker itself.
