How long would you let baguettes cool in the oven? Wouldn't they still cook quite a bit, especially in an oven with a hot baking stone in it. Maybe cook for a shorter time before doing this, or just leave it in the cooling oven for maybe 10 minutes to avoid overcooking? Thanks,
