Hi Simona, our Gluten-Free Measure for Measure Flour is meant to be used as a substitution flour in regular cake, cookie, muffin and other non-yeasted recipes; it can be substituted 1:1 (by weight or volume) for either All-Purpose Flour or Whole Wheat Flour. We also have many recipes on our website that we have already converted for you which utilize this flour. We don't recommend substituting this flour into recipes that call for another type of gluten-free flour, which might be where you're running into the addition of xanthan gum.
