Hi Elaine, we don't think cornstarch is your best option for replacing xanthan gum in your gluten-free baking. Can you tolerate psyllium husk? This is a common stabilizer used in gluten-free baking, and is especially useful in gluten-free yeast bread recipes. Other options to consider are chia seeds or flax meal.
