I would like to substitute xanthum gum for vital wheat gluten in a recipe (100% whole grain bread....KAF whole wheat and oatmeal). I had read on-line that the ration was 1/2 teaspoon of xanthum gum for 1 tablespoon of vital wheat gluten or 1/2 teaspoon per cup of flour. Is this the correct ratio?
