Hi Martine, the trickiest factor will be omitting eggs in your gluten-free baking. This is because many gluten-free recipes rely on eggs to provide structure in the absence of gluten. Particularly bread recipes aren't likely to rise as well with egg substitutes, but if you have to omit the eggs we generally recommend a flax meal egg substitute in our gluten-free bread recipes.
