Hi Sam, these days you have even more options for choosing gluten-free flours, so it depends a bit on the type of flour you're using and the pasta recipe you want to make. If you'd like to make our Gluten-Free Pasta recipe, then you would want to couple the Gluten-Free All-Purpose flour called for in this recipe with the xanthan gum that is also required. On the other hand, if you have a favorite pasta recipe that you'd like to try substituting a gluten-free flour in place of the regular unbleached all-purpose flour called for, then our Gluten-Free Measure for Measure flour is the way to go, and since that flour already has added xanthan gum you won't need to add any.
