Hi there, we tend to prefer xanthan gum for most gluten-free baking projects. However, if this ingredient doesn't work for you, America's Test Kitchen did some pretty extensive tests with the three most common binders used in gluten-free baking: xanthan gum, guar gum, and psyllium husk. They found psyllium husk can be a great choice in yeast bread recipes, but doesn't always work well in other types of gluten-free baking. Check out this article for more information and references.
