Hi Wayne! We wouldn't suggest trying to mimic bread flour by combining all-purpose flour with xanthan gum, as xanthan gum wouldn't strengthen the gluten, it would just add another starchy component. Instead, you can use all-purpose flour in a recipe that calls for bread flour, you just need to reduce the water by about 1-2 teaspoons for every cup of flour.
