Hi Deb, if you're looking to bake gluten-free, you can simply replace the all-purpose flour in your cake recipe with our Gluten-Free Measure for Measure Flour. It already has the xanthan gum mixed right in, so you won't need to make any other changes. We hope that helps, and happy baking! Kye@KAF
