When the recipe asks for seeded tomatoes ( when I have time), I simmer the seeds until the juice has turned into a jelly. It concentrates the flavors and what a flavor it is! Far tastier than the chopped, peeled, seeded tomatoes, good as they are. This jelly is good smeared in toast, and in vinagrettes.
