Pat, this recipe calls for all purpose flour in three different applications--in the crust, the filling, and also the topping. I would recommend following this Gluten-Free Pie Crust recipe for the crust. For the thickener you could substitute a gluten-free thickener. Check out our Pie Thickener Chart for some suggestions for other thickeners you could use. For the topping it would probably work fine to substitute a gluten-free flour for the regular flour.
