Hi Barb, the cornstarch in confectioners' sugar does offer a bit of added stability to whipped cream, but if you're looking to keep your whipped cream stable for an extended time, check out this blog post for some great tips. Our Instant ClearJel is a real winner here, but you won't want to reduce your sugar too much, since we recommend adding the Instant ClearJel in with the sugar (4 parts sugar : 1 part Instant ClearJel, by weight), which helps prevent clumping. Here are our recommendations for stabilizing whipped cream with Instant ClearJel: Add 2 teaspoons of Clearjel with ¼ cup of confectioners’ sugar. Whip 1 3/4 cups of chilled heavy cream, then with the mixer running, add the ClearJel/sugar mixture. You’ll see the cream firm up almost immediately.
