Here are our recommendations for stabilizing whipped cream with Instant ClearJel: Add 2 teaspoons of Clearjel with ¼ cup of confectioners’ sugar. Whip 1 3/4 cups of chilled heavy cream, then with the mixer running, add the ClearJel/sugar mixture. You’ll see the cream firm up almost immediately.
