I NEVER use an electric mixer to make whipped cream. It is too easy to make butter because the time elapsed between soft-peak and butter is seconds long. I use an old-fashioned hand beater. I add powdered sugar and vanilla when the cream is beginning to thicken but still not quite soft-peak. My grandmother taught me how to make whipped cream this way in the 1960's and it always works.
