Hi Mary Jane, Having a dinner party for 25. I would like to serve Blueberries and cream for dessert at 7:30PM.(because I cannot figure out a way to serve ice cream) How early in the day can I make the cream? Which additive(s) would you choose for this job? Thanks for sharing your knowledge. You can whip the cream in the morning and it will stay for 24 hours. We used 1/4 cup sugar plus 1 tablespoon Instant ClearJel with 2 cups heavy cream. This will keep the cream stabilized and ready to use in the evening. Have a great party!! JoAnn@KAF
